[CH] Tonight's Dinner - Curry Shrimp

This was tonight's dinner. I adapted the recipe from a
community book. Mine is quite different as they didn't
saute, there was no onion or garlic and I used some
curry paste. I also served mine over basmati rice. Had
no chutney or raita so I used some sour cream and
served peas with it. Really good and quick. Everything
took under 1/2 hour.

Curried Mushroom Shrimp

16 jumbo shrimp (16-20 lb), peeled & deveined
1 tbsp olive oil
2 cloves garlic, sliced
1 small onion, sliced thinly
4 oz cremini mushrooms, sliced
1-10 oz can cream of mushroom soup
1/4 cup water
Curry Paste:*
1/2 tsp worcestershire sauce, ** see note
1/4 tsp dry mustard
1/2 tsp curry powder
1/8 tsp black pepper
Garnish:
dollop sour cream, *** see note

Preheat a skillet over medium-high heat. Add the oil,
onion and garlic.
Saute until onions are tender and garlic is lightly
browned. DO NOT
BURN. Add mushrooms and saute until tender, about 5
minutes. 

In small bowl, combine cream of mushroom soup, 1/4 cup
water, and curry 
paste. Mix into mushroom mixture in pan. Simmer for 10
minutes, stirring 
frequently, so mixture doesn't stick to bottom of pan
(it will if you don't).

Add shrimp. Cook for 2 minutes on one side and turn
over and cook for another
2 minutes. If the shrimp are still a bit grey, cook
for another minute or
so until all shrimp are pink and cooked.

To serve:

Place side dish of basmati rice on bottom of plate.
Cover with 1/2 the
shrimp. Place some of the mushrooms and sauce over the
shrimp. Garnish
with a dollop of sour cream and some cooked peas, if
you wish.

Risa's notes:

* If you have curry paste in your refrigerator, omit
the dry ingredients
and place 1 tbsp of curry paste in with the cream of
mushroom soup mixture.

** I used something called Mushroom Ketchup, which is
a British ingredient.
It tastes somewhat like worcestershire sauce and is
vegetarian. If you don't 
have that and you have worcestershire sauce, then use
that.

*** To add some extra flavor, use Friendship Sour
Cream with Roasted Garlic. 
That is what I used. Otherwise, plain or low fat is
fine. It is there to cool
the mouth from the chiles in the curry paste (if that
is what you use).

Also, I used Campbells Cream of Mushroom Soup with
Roasted Garlic. Use the
original if that is what you have.
