I stew my tomatoes each year and jar them.  It's so simple but it is a mess.
Cut up some onion and whatever kind of pepper you want in it and mix in a
bowl.  For all purpose use and no wifes abuse, I use bell pepper.  My wife
wont even eat black pepper.  Then peel your tomatoes, cut up in a big pot,
throw in a handful of the onion mix, and cook for about 30-45 min.  I also
add a about 1/2 cup of red wine vinegar as a preservative.  Hot water bath
them.  They have lasted me more than 2 years.  Use a jar in spaghetti sauce,
chilli, stews, anything you like.  Always better when home grown.

I not only grow chiles, I also grow tomatoes ....

Now my sweet problem is ... I will have too much tomatoes on my hands come
harvest time this year :)
