Isn't it interesting how many places use similar recipes.  E.g. curtido,
the ubiquitous cabbage onion relish of El Salvador (and maybe all of Latin
America, for all I know), is basically identical except spice/herb
flavoring is oregano and chile instead of caraway and black pepper, curtido
is raw instead of cooked in oil, and of course curtido has NO SUGAR (the
USA standard additive, as Cameron has often commented about).
