[CH] Last Night's Dinner - Asian Shrimp & Noodle Dish

This was last night's dinner - Cold Asian Shrimp &
Noodles.
Absolutely delicious. DH said it was a winner. Quick
to put 
together too. I did a lot of it earlier in the day and
did the
last minute cooking and combining later. Love dishes
like this.
Garnished with hot chiles, that is where they are. Of
course,
if you wish you can add them to the sauteing of the
shrimp.

                     Cold Asian Shrimp & Noodle Dish

   6      tbsp          Newman's Own Oil & Vinegar
Dressing
   6      tbsp          fish sauce -- or soy sauce
   2      tbsp          Thai basil -- julienne
   2      tbsp          fresh cilantro -- chopped
   1      tbsp          fresh ginger -- peeled &
minced
  12      jumbo         shrimp -- peeled & deveined
                        Noodles:
     1/2  pkg           pad thai noodles (fettuccine
thickness)
                        snow peas -- julienne
                        Garnish:
                        ripe red chile peppers --
slivered

For marinade: Whisk dressing, fish sauce, 1/2 the
basil and cilantro and the ginger in a bowl. Place
shrimp in bowl and let them marinate for 10 minutes.

While they are marinating, place the noodles in a
medium bowl. Cover with boiling water. Cover and let
sit for 15 minutes. In the last minute, add snow peas.
Cover and let sit. Drain well. Rinse in cold water and
drain well. 

Preheat a skillet. Remove shrimp from marinade. Place
in hot skillet and cook for 1 minute, turn and cook
for 2 minutes. Remove to bowl with noodles. Combine.

Place leftover marinade in a small saucepan. Heat to
boiling. Turn off heat and let it sit for a minute or
so until a bit cool. Top noodles with marinade and mix
well.*

Refrigerate for 1 hour.

Serve garnished with fresh slivered chile peppers and
serve with a jar of chile paste (Lan Chi preferred).

* This dish can be served either warm or ice cold from
the refrigerator. Good either way.
