i remember reading somewhere that the 'female' (rounder bottom, thinner
toward the stem) is much more bitter than the 'male' eggplant.  The female
also is supposed to have more seeds which add the bitterness, hence the
need for salt.  Since the time i stored this information away in some brain
cell (along with the other 'jeopardy' knowledge i've accumlated over the
years), what i do is try to buy 'male' eggplants when possible - looking
for those which are close to the same thickness at either end.
Of course, the whole concept may be total crap, but it adds a sense of
higher purpose to produce exploration....
