Ok, I've sadly become one of the new low cholesterol, low fat food
folks out there due to some health concerns expressed by my doctor as a
result of my bi-yearly checkups. For those of you who are looking for
a good "cap snack", this one is low fat and has low cholesterol. Jim
Campbell will have to let us know if this would also be low sodium.

Ted's Hot Bean Snack
1 - 19oz can garbanzo beans (rinsed and drained)
1/2 cup Wild to Mild Fiery Hot Hab Finishing Sauce
1 CLOVE minced garlic

Rinse the garbanzo beans well and drain in collander. Let sit until
well drained, about an hour or so. In a mixing bowl, combine finishing
sauce and garlic, then mix in beans coating them thoroughly. Let sit
overnight in fridge, occasionally mixing the beans to coat them
thoroughly. In the morning, mix again and pre-heat oven to 300 deg. F.
Place beans flat on a baking sheet (we use silpat so we don't have to
use non-stick spray or oil). Beans should all be flat on the sheet and
not doubled up. Bake for 30 minutes. Remove from oven, mix up beans
well and bake for an additional 30 minutes. Remove and mix again, and
bake a 3rd time for 30 minutes. Remove and mix for a final time and
bake for the last 30 minutes. This seems like a long process, but this
has been the best temp and time for making the beans nice and crunchy
so they aren't so soft inside (otherwise you have to refrigerate).

Yields close to two cups of beans for a snack.

Ironically, if you eat these one at a time, they aren't so bad. Eat a
handful and you're going to get a nice hot mouth! I keep these at my
desk at work and they last all week if I nibble on a few each day.

Nice source of fiber, low fat, low cholesterol, etc.
