[CH] Tonight's Dinner - Sausage & Black Bean Chili

This was tonight's dinner - Sausage & Black Bean
Chili. I did some sauteing in a skillet and then put
everything in the crockpot and let it rip for 4 hours
on LOW. This came out delicious. DH thought it was a
bit hot (it's supposed to be silly!!) - it was but not
too hot by any means. Could've been hotter IMHO.

   1      tbsp          cilantro-infused olive oil
   1      lb            Italian Sausage -- hot
   1      lg            onion -- cut in sm pc
   1      lg            red bell pepper -- cut in sm
pc
   1                    green bell pepper -- cut in sm
pc
   1                    jalapeno chile pepper --
seeded & chopped
   2      lg clove      garlic -- sliced
   1      tbsp          ground chile
   1      tsp           ground cumin
   1      28 oz can     tomatoes in puree -- crushed
   1      15 oz can     black beans -- rinsed &
drained
   1      tbsp          cider vinegar
                        salt and pepper
                        Garnish:
                        reduced fat sour cream
                        chopped cilantro
                        chopped chile

This is a Two Part Process

1) Heat oil in heavy large saucepan over medium-high
heat. Add sausages and brown them on all sides. Turn
them occasionally. This should take about 8 minutes.
Remove from skillet and place back on heat. Add onion,
garlic, and peppers. Saute over medium-high heat until
onion is browned lightly and the peppers and garlic
are tender. Add ground chile and cumin. Mix well and
add salt and pepper to taste. Pour the whole thing
into the crockpot.

2) Add tomatoes and beans to crockpot mixture. Mix
well. Cook on LOW for 4 hours. In last half hour, add
vinegar and mix it in. Cook for last 1/2 hour and
serve, with or without rice, garnishing each bowl with
sour cream, chopped chile and chopped cilantro (if
desired).
