This wasn't too big a hit with my 6 year old but me
and hubby ate 2 servings each. Good stuff. 

I sprinkled some Peach Hab on mine and Steve drizzled
some Crazy Jerry's Devil's Brew Garlic Hot Sauce on
it. Lots of it. Then he tried Psycho Bitch. He thought
it was very hot but very good.

                             Fiesta Casserole

   1      lb            lean ground beef
     1/2  cup           scallion (green & white parts)
-- chopped
     1/2  15 oz can     pinto beans -- drained &
rinsed
   1                    red bell pepper -- chopped
     1/2  4 oz can      diced green chiles -- drained
                        salt and pepper -- to taste
   4      1 oz bags     Dorito chips -- Nacho Cheese
flavor
   2                    red skin potatoes -- sliced
thin & cooked
     1/2  cup           mild salsa -- * see note
   3      oz            cheddar cheese -- shredded
     1/2  cup           nonfat sour cream
                        cilantro -- chopped

Preheat oven to 400 degrees F.

Saute the beef and onion in a skillet over medium
heat. If there is a lot of fat, drain it off. Return
to pan and add beans, red pepper and green chiles.
Salt and pepper to taste.

Coat a casserole dish with cooking spray. Place a
layer of Doritos on the bottom of the dish. Top with
potatoes, salsa, beef-onion mixture and cheese. Repeat
until all ingredients are used up. This should take 2
layers.

Bake for 15 minutes until the cheese is all melted.

Spread the top of the casserole with the sour cream
and garnish with chopped cilantro (optional).

NOTES : Risa's notes:

* I used mild salsa as I was cooking with my son in
mind and he is not a chile-head. If you are making
this for someone a bit more adventurous, use a medium
or hot salsa.

If cooking for a picky child, use mild green chiles.
If your child is a bit more adventurous, use jalapeno
peppers or some other medium-hot chile.
