   I cut them in half lengthwise and remove the seeds.
Then, depending on the pod type, I cut them lengthwise
again, score them so they lay flat or leave them alone.
Mostly I don't want them to curl up in the dehydrator
trays.  When that happens they take longer to dry.

   The only chiles I treat differently are aji amarillo.
I just cut the top of the chile off along with the stem
and in they go.  When they dry I just poke a toothpick
into the cavity and knock the seeds out.
