FWIW in my case I've been drying Caribbean Red habs in the oven at 
approximately 220F, and I'm getting no eye burn at all.  Just that wonderful 
rich aroma.  Maybe it's the higher temperature - I know that a pepper fried 
in an Asian dish becomes less pungent and more nutty-tasting if it is 
toasted more; if that's the case here, I'm sacrificing some hab pungency in 
exchange for that rich nutty flavor.
