Dave,

Do you usually wait until the Poblano's turn red to dry them?  I've found
mine tend to get problems (bug bites, molds, etc) if I wait that long (east
Tn, and 3rd year of drought -- that means only 4' of rain/year, not 6').
Also, it seems mine will mostly wait till winter to turn red (I've picked a
few so far, but the plants are loaded with dark green pods of various
sizes).  I also have a jalapeno that doesn't want to turn red (cracks first,
then slowly reds up), while other varieties turn red with no problem.

Any suggestions?
