[CH] Hot Sauce Review

My wife and I had dinner last night at Yellowknife's only Tex-Mex restaurant
and were delighted to find that they were starting to amass quite a good hot
sauce collection. Most of the bottles were obscure, little known names that
were gifts from customers who had picked them up in their travels. I like
the idea and intend to make a contribution myself the next time I go.

Jose Locos does not serve real Tex-Mex but it is as close as we can come to
it up here. The owner does the usual tacos, burritos, fajitas and so on but
with a northern Canadian influence, like using caribou meat instead of beef
in his dishes. The food tends to be underspiced so I was pleased to see the
50 odd bottles of sauces displayed behind the bar. We chose two that I had
not come across before and liked them both.

Bulliard's Louisiana Supreme Jalapeno Sauce: green, mildly hot but not
grassy or too vinegary. It had a nice, not too aggressive flavour and I
poured it liberally over a caribou fajita. It's made by Peppers Unlimited in
Louisiana. It may be common stuff for many of you but I haven't seen it in
Canada before in my travels. I just checked Chilly Chiles website in Ottawa
and they don't carry it, although they do have hundreds of other sauces
there.

Rasta Rage: a mild fruity habanero sauce with a banana and papaya base.
Rather sweet with no vinegar bite at all. It would go well with pork,
chicken or battered shrimp I think. Product of Costa Rica. I couldn't find a
reference to it anywhere on the web. I suspect it's a small company selling
locally and that some vacationing Yellowknifer stumbled upon it while down
there. Anyone else here ever come across it?

Oh yeah, I saw something whimiscal that reminded me of Rael. There was a
sign on the kitchen door that warned:

"Do not be alarmed by strange noises coming from this room. It's all part of
the process."
