How about ketchab :-)
Should be good -- add enough habaneros to make some evil ketchup.
I used this recipe this fall for homemade ketchup -- BTW -- thanks to those
that answered my request for recipes.
Homemade Evil Jalapeno Catsup
Yield - 5-6 jars
12lb Tomatoes
4 md Onion; diced
3 Cups vinegar
¾ cup brown sugar
3 ts Salt
2 ts Sweet Paprika
2 ts black pepper
½ ts Nutmeg
½ ts Ground Cloves
6 ripe habaneros, jalapenos or whatever (a lot for evil ketchup)
Juice tomatoes, put in kettle and bring to boil, add spices and simmer.
Peel and cube onions, finely.
Coarsely chop the chilies
Mix chiles and onion with vinegar and bring to a boil, simmer for 20
minutes, whir about a bit in a blender and put glop through a food mill
Add chile/onion pulp and vinegar to tomato mixture
Boil/simmer till desired consistency, put in sterilized jars and water bath
can for 30 minutes.
Makes 4 1/2 pints
The first batch is gone -- I'm going to make some more with some canned
tomato sauce that I have left --- Hmmm -- Think I'll add hab powder to this
batch.
