Hi All --

A multi-faceted e-mail here, trying to hit all the high points....

1. My wife and I had a little pod (our first) on January 5th -- Nova Lynne
Evans. We call her Nova. So far, no adverse reactions to all of the chile
smoke/fumes/dust that seem to always be in our kitchen. She also does not
seem to mind the chiles in my wife's diet (breastfeeding).

2. It's about that time of year again, and I am looking for anyone who is
interested in swapping some seeds. I have 25-30 varieties and will send a
list to anyone who is interested. In addition, I will be purchasing some
seeds this year, but I never use a whole packet -- once I have those I will
trade them as well. I would LOVE some suggestions on what to buy. If you
don't have any to swap, don't worry -- I would still be happy to send you
some seeds. Please contact me off-list if interested.

3. Lastly, I made a fiery hot chicken and cabbage stir fry last night and
thought I would share....

Chicken and Cabbage

10 oz. boneless, skinless chicken, cubed
1/4 head cabbage, cubed
1/2 red onion, cubed
5 cloves garlic, minced
6 dried chiles Japones, minced
2 T sambal oleck
3/4 cup chicken stock
1 T oyster sauce
1 t chile vinegar
1 t sugar
1 T soy sauce
1 T corn starch dissolved in 2 T cold stock
1 T sesame oil
2 T chile oil

Combine chicken with 1/2 T EACH of sambal oleck and sesame oil and season
with S&P. Allow to sit at room temperature for 30 minutes or so. Combine
remaining sambal oleck, remaining sesame oil, and other sauce ingredients in
small bowl. Taste and adjust salt. Heat a wok over high heat until white
ash forms in the bottom and the patina stops smoking. Add the chile oil
around the edge and immediately add the chicken. Toss the chicken briefly
and add the chiles and garlic. Toss and follow with the cabbage and onion.
Continue stirring for a minute or so and add the sauce. Bring to a boil and
add enough of the corn starch mixture to thicken (I didn't use all of it).
Serve with steamed rice. Serves 2-3.

Enjoy.

Matt
