Today I did some baking. I am taking Trev to Dorney Park on Sunday and my friend is meeting us there with her kids. She says there is a place to eat picnic-style there. She is bringing cold cuts, I'm bringing breads! I made a loaf of Cuban bread and a batch of Jalapeno-Parmesan Breadsticks. Boy did these come out great. I had to taste one! I took the smallest one! Here is the recipe: Jalapeno-Parmesan Breadsticks (adapted) Unknown source, posted to ABMtalk by Cynthia 3/4 cup lukewarm water 1 tbsp garlic oil 1.5 tsp salt 1.5 cups bread flour, more like 2 cups 1 tsp Splenda 2 tbsp dry milk 1.5 tsp SAF yeast (breadmachine yeast) 4 jalapeno chiles, seeded & minced 1/2 cup parmesan cheese, freshly grated egg white, for brushing Combine all ingredients in bread pan, except for jalapenos, cheese and egg white. Process on dough setting.* When cycle is complete, turn dough out onto well floured work surface. Knead jalapenos and 7 tbsp cheese into dough until evenly distributed. Transfer dough to lightly oiled bowl and cover with plastic wrap. Let rise in warm place for 1 hr. Preheat baking stone in middle of 400 degree oven. Place dough on well floured work surface. Cut into 12-15 pieces, roll out with palm of your hand until about as thick as a pencil and 12" long. Sprinkle baking sheet with cornmeal. Transfer breadsticks to baking sheet, spacing about 2" apart. Cover with plastic wrap and let rise 20 minutes. Brush with beaten egg white and sprinkle with remaining cheese. Bake for 16-20 minutes until golden brown and crisp. Cool on wire rack. * If you have a set of beeps in your dough cycle, put the jalapenos and cheese in at the beeps.
