This was tonight's dinner. Boy was it a big hit with DH. Said it a few times how great it was. It was delicious. I thought it was too hot for him and he loved it. We're getting there....another chile-head in the house! Anyway, I adapted the recipe from Surf & Sirloin which is a book from the Texas restaurant from 1964. I used a few things that the original restaurant wouldn't have used in their chili. Definitely a keeper! * Exported from MasterCook * That Bowl of Fire Recipe By : Adapted from Recipes from Surf & Sirloin Serving Size : 2 Preparation Time :0:00 Categories : Chiles Chili & Stew Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------- 1 1/2 tbsp Italian sausage -- HOT, ground 2 tbsp olive oil 1/2 lg onion -- chopped 3 cloves garlic -- minced 2 tbsp chili seasoning, * I used Red Lion Medium 1 tsp salt 1 tsp ground cumin 1 tsp Mexican oregano -- crumbled 1 tsp marjoram -- ground 1 tsp Splenda Sweetener 1 tbsp paprika 8 oz water 1 14 oz can diced tomatoes, ** see note Garnish: sour cream shredded white cheddar chopped green chiles chopped chives Place oil in a large pot. Heat until smoking and add sausage. Cook until no longer pink. Add garlic and onion and cook until softened, but not burned. Add water and tomatoes and simmer for 45 minutes. Add seasonings and cook for another 30 minutes. If you want beans, add towards the end. To serve: Place a big dollop of chili in a warmed bowl. Top with sour cream, chives and green chile.
