I had a fourth generation family farm out in Clay City, Indiana (The
Swiss Connection- Yegerlehner Farms) contact me for chiles last year. 
We chatted a bit & came up with a Chipotle Cheddar and a Red Savina(R)
Habanero cheddar.  I had them both at my booth at the State Fair this
year.  He did an outstanding job on them, IMHO, lots of disclaimers
apply.  

It was a hoot watching people sample the RS Cheddar thinking (despite
being warned otherwise) that is was 'just another pepper jack'.  The
stuff is on the medium-upper limits of my tolerance :-)  Needless to
say, it sent Joe & Jane Public dancing in the aisles ;-)
