Hi Risa,

A resturant in my area once had filet of Antelope. (I was told it came 
from a Texas ranch.)  It was prepared by tamping fresh, ground black 
peppercorns into the surface, and was cooked between rare and medium 
rare (bright red, not quite pink).

It was delicious.
