I came up with this creation this morning as I had counters full of tomatoes and chiles. I needed to do something with them. This is what I came up with. Tomato-Chile Frittata Serves 1 2 large eggs, beaten 1 tsp water 1 clove garlic, minced 2 sm ripe chiles, seeded & chopped 2 small tomatoes, seeded & chopped 1 tbsp vegetable oil, or butter 2 slices Pepper Jack cheese, shredded Preheat a nonstick skillet over medium high heat. When hot, add oil, garlic and chiles. Saute for 30 seconds. Do not let this burn. Add tomatoes and cook until softened a bit, about 3 minutes or so. Pour in eggs. Cook, stirring a bit, until eggs are set and cooked. Sprinkle on cheese. Turn off heat and cover with a pot lid or a bowl until cheese is melted. Serve immediately. Risa's notes: I used a Guam Boonie chile and a Fish Pepper.
