I've grown chiles for 30 years, roasted, peeled, etc.  I often use flowing 
water to get the last bit of skin off.  Was this removing flavor?  If so, I 
never realized it.  I wouldn't use water to completely remove skin, but the 
last little bits that cling are annoying to remove otherwise.  Margaret L

folks to rinse the skins from the peppers when that
