[CH] Tonight's Dinner - Linguine Carbonara

This came out soooo delicious. Unbelievable but it
wasn't spicy enough for me. Next time I make it (and
there will be a next time), I will up the chile flakes
or use a fresh chile. Otherwise it was amazingly good.

I think my chile flakes are old and I need a new
package of them. Onto the Costco List they go...

                            Linguine Carbonara

   2      tbsp          pancetta -- thinly sliced
   1      tbsp          extra-virgin olive oil
   2      tsp           unsalted butter
   1      lg clove      garlic -- peeled & crushed
     3/4  tsp           red chile flakes
     1/2  lb            dried linguine
   2                    egg yolks
     1/8  cup           cream
     1/8  cup           romano cheese -- freshly
grated
     1/4  cup           parmesan cheese -- freshly
grated
                        freshly ground black pepper
                        Italian parsley -- chopped

Place a large pot of water on the stove and bring to a
boil. When boiling, add salt and pasta and cook
according to package directions.

While the pasta is cooking, combine the oil, butter,
garlic, chile flakes together. Cut the pancetta into
strips and add it to the mixture. 

Place a skillet over low heat and preheat it. When
hot, add the oil mixture and saute until the pancetta
renders its fat. Take off heat and remove garlic
cloves. 

Lightly beat the egg yolks and combine them with the
cream, grated cheeses, pancetta mixture and its fat.
Drain the pasta and add to  a heated serving dish.
Season with black pepper and sprinkle with parsley.

Toss and serve immediately.

Serve with garlic bread or warm rolls (or knots or
breadsticks).

NOTES : Risa's notes:

This dish can be lowered in fat by using fat free
half-and-half for the cream and using a bit of
cornstarch in it so that it doesn't coagulate while
cooking. But, I would make it the way it should be,
since you only live once!
