Paul is having 'puter problems and asked me to forward the below for him:

----------------------------------------------------------------------------------

To all I met at Open Fields,
A synopsis of my trip, 16 hours out, 48 hours of non-stop fun, 16 hours
home. Need I add more? I remember reading of Open Fields when I first joined
this list a few years back & someone wrote of putting faces to the names &
dancing in the "fields". Now I know what they meant.... I hope to try again
next year, but no promises.

OK, here ya go, NorthEast ChileMan's Lawbsta Bisque:
This is the original:
The FamilyCircle Encyclopedia of Cooking Lobster Bisque:
Makes about 8 servings:

1 Medium-size onion, chopped (1/2 cup)
1/2 cup (1 stick) butter or margarine
3/4 cup all-purpose flour
3 cans condensed chicken broth
3/4 cup dry sherry
2 cans (about 6 ounces each) lobster or crabmeat, drained & diced
3 cups light cream or half-and-half
2 tablespoons tomato paste
salt & pepper to taste

Sauté onions in butter in a large saucepan. Stir in flour; cook until
bubbly. Gradually stir in broth; cook until thickened. Stir in sherry and
lobster. Cover; simmer 15 minutes. stir in remaining ingredients: heat.

Basically I doubled the recipe & ran into a problem. The recipe does not
state size of condensed soup cans & when I added 6 cans of broth, I had a
really nice pot of plaster of Paris. Off to the grocery store & bought a
bunch of non condensed broth & added it to the paste until it was creamy.
Maybe RisaG can jump in here & tell me if doubling the flour was wrong or if
I was suppose to use large cans? Of course I added 12 Aji Limon off a plant
JohnT sent me, at the onion sauté part, chopped. At this point I need to add
that I doubled the balance of remaining ingredients , meaning the lobster,
light cream & sherry to compensate for the size of the pot of thinned paste
I now had. Didn't seem to impart too much heat to me but wife said it was
inedible, not a Chile-Head my wife.

Thank-you Jim & Abby for one of the highlights of my life! Jim, don't forget
your suppose to get me a couple of 2003 posters, please.

Thanks to all I met for a wonderful time! Jeff for the powder, Hasta la
lista, Jesse G., George, Scott, Dan, Karen & Stu, Cameron, Hobby farmer &
wife (thanks for letting me use your range, don't think the Lawbsta Bisque
would have been quite the hit it was cold) & everyone else I've either
forgotten due to alcohol or don't remember. Oh & Karen Stober & escort...
See, forgot his name...

Oh yea, & Alex... Barefoot boy with cheeks of tan....

Until I get my puter up,
Paul
