Try experimenting with some of the Asian dressings, they are often sweet but 
they have other flavors as well.  Then it doesn't matter whether you're 
using cabbage, or cukes, carrots, etc.  Have you been to a Korean restaurant 
that serves half a dozen tiny bowls of different "pickles" as complimentary 
sides?  You can steal some ideas that way.
