[CH] Lunch Yesterday - Warm Chinese Salmon Salad

This was an impromptu lunch yesterday. I had leftover
cooked salmon from the night before and got inspired
by something I saw on tv. Boy was this good.

Warm Chinese Salmon Salad w/Hot Oriental
Dressing

3 handfuls lettuce -- mesclun mix pref
1 handful fresh spinach -- washed well
1 pc salmon -- cooked
1/2 cup broccoli florets -- cooked or
raw
handful chinese snow peas -- julienne
3 shiitake mushrooms -- stemmed
& sliced
1 ripe red chile -- seeded & sliced
handful flaked almonds
Dressing:
1 tbsp dijon mustard
1 tsp sour cream
1 tsp worcestershire sauce
1/4 tsp Splenda Sweetener
1/2 tsp wasabi powder
1 tsp tamari soy sauce
salt and pepper -- to taste
In small bowl, combine dressing ingredients. Whisk
well. Set aside.
For salad: Lay all the mesclun mix in a large bowl.
Top with spinach and then layer the rest of the
ingredients on top, minus the salmon.
Preheat a nonstick skillet. Spray with cooking spray.
When hot, add cooked salmon. Let it brown on both
sides and then remove from heat. Break salmon into
chunks and place on top of salad.
Drizzle with dressing and then sprinkle almonds on
top.
