x/p CHILE-PEPPER-RECIPE This was tonight's dinner - White Lightning Chili. I adapted this from Rachael Ray's 30 Minute Meals Cookbook. It came out delicious, especially with extra hot sauce doused on top. So good. * Exported from MasterCook * White Lightning Chili Recipe By : adapted from Rachael Ray, 30 Minute Meals Serving Size : 6 Preparation Time :0:00 Categories : Level 1 Main Dish Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tbsp extra-virgin olive oil 1 lb ground turkey 1 yellow onion -- chopped 1 red chile pepper -- minced 2 cloves garlic -- minced 1 tbsp ground cumin cayenne pepper sauce palmful chopped cilantro 1 14 oz can chicken broth 1 15 oz can red kidney beans -- drained & rinsed Garnishes: shredded cheddar cheese chopped cilantro chopped chile Heat oil in a deep skillet over medium-high heat. Add turkey and cook for 2 minutes, keeping it moving.*** Add onion, red chile, garlic, seasonings, and cilantro. Reduce heat to medium and cook together for 5 minutes, to soften onion. Add broth and beans. Add salt to taste. Bring to a boil. Reduce heat and simmer until ready to serve. To serve: put rice (or other grain)* in bowl and then top with a good ladleful of chili. Top with shredded cheddar, cilantro and chile. Serve. If you wish, garnish with some crushed tortilla chips too.** - - - - - - - - - - - - - - - - - - NOTES : Risa's notes: * If on a low carb plan, cook some cauliflower (or thaw and heat some frozen cauliflower) and then grind it in the food processor with a touch of salt, pepper and a drizzle of cilantro-oil (or other flavored oil). Use instead of rice. Works perfectly. ** If you are on a low carb plan, you can garnish with a few Atkins Crunchers in Nacho flavor. They work well in this situation. *** After I cooked the turkey, I drained it on paper towels to get rid of some of the fat. Original recipe from Rachael Ray's 30 Minute Meals. She uses 2 cans of Great Northern or Red Kidney Beans and 2 cans of chicken broth. She used serrano or jalapeno peppers. I used a fish pepper.
