[CH] Dinner the Other Night - Linguine with Shrimp Bolognese

This was dinner the other night (forgot to post it).
This was so delicious. I should've used more red
pepper flakes but didn't. It was pretty good the way
it was - just not overly hot. 

Loved by both of us (Trev is allergic to shrimp so he
didn't have the sauce, I just gave him his usual
marinara sauce):

                      Linguine with Shrimp Bolognese

   1      lb            med shrimp -- with shells
   5      tbsp          extra-virgin olive oil
   1      tbsp          garlic -- chopped
     1/4  cup           basil leaves -- torn into pc
     1/4  tsp           red pepper flakes -- or more
                        coarse sea salt
                        freshly ground black pepper
     1/2  cup           shrimp stock
     1/2  cup           marinara sauce
   1      tbsp          Italian flat leaf parsley --
chopped
   1      lb            linguine

Place a large pot of water on and bring to a boil.
When boiling, add some salt and the pasta and cook 1
minute shy of  package directions. Drain well.

As the water is coming to a boil, place the shrimp
shells and water to cover in a saucepan and bring to a
boil. Simmer for 15 minutes and then drain and reserve
the liquid. Discard the shells.

Place a skillet on medium-hig heat. Add the oil and
then the garlic. Cook for 30 seconds and then add the
shrimp. Cook for 1 minute and then add 1/2 cup
reserved shrimp stock. Cook until reduced by half and
then add the marinara sauce and simmer for another
minute or so. Taste and adjust seasonings. Stir in
parsley. Sauce should be brothy, not thick. Keep the
sauce warm over a low heat until the pasta is ready.

When pasta is ready, drain well and place back in warm
pot. Add sauce and cook briefly so the pasta absorbs
some of the sauce. Serve immediately in warm bowls.

Serve with warm garlic bread or rolls.
