Hi All - Happy New Year! My cousin Jim makes these mushrooms for parties. He won't give me the recipe, but I played around with it tonight and am pretty happy with this... Enjoy! Helen Jim's Chipotle Mushrooms 2 10 oz package white mushrooms quarter cup chopped chipotles in adobo (or more!) half cup finely chopped sweet onion 1 tablespoon olive oil one pinch thyme half cup good beer Heat olive oil in a skillet large enough to hold the mushrooms. Add the onions and cook over medium heat until soft about 5 minutes. Add the remaining ingredients and continue to cook over medium heat for about 15 minutes or until the mushrooms are cooked through and the sauce has thickened. Serve with toothpicks as a snack, or over rice for a meatless meal...yummy. Jim chops them up and adds them to burritos!
