[CH] Tonight's Dinner - BBQ Chicken Bake

This was tonight's dinner - BBQ Chicken Bake. I
actually made this up as I went along, with no recipe
tonight! Amazing!

I had 4 chicken breast halves and no idea what to do
tonight (rare occasion). I decided to finish off a
bottle of Emeril's bbq sauce and use up some of the
cilantro and scallion that was in the veggie bin in
the refrigerator. 

It came out better than expected (except for my son
who didn't like the cheese on the chicken so I picked
it off).

Of course, if you want this very spicy, choose a very
spicy bbq sauce and a spicy cheese. I used what was
left of Emeril's sauce (too sweet so I watered it down
a bit) and I put Cabot's Habanero Cheddar on my
chicken breast. I was thinking I could've also put
some chopped fresh chile in with the scallion mixture
but I had none left in the house (will be searching
supermarkets for fresh chile this weekend!). If you
have it, use it.

   4                    boneless skinless chicken
breast halves
     1/3  bottle        bbq sauce -- * see note
   2      tbsp          water
   3                    scallions (green & white) --
thinly sliced
     1/4  cup           cilantro -- finely chopped
   8      slices        habanero cheddar cheese -- **
see note

Preheat oven to 375 degrees F.

Mix together the bbq sauce and water in a small bowl.
Whisk well. Put chicken in a casserole dish and pour
over the sauce. Coat well. Refrigerate for 1 hour.

Preheat cast iron grill pan. When hot, remove chicken
from marinade, wipe off excess, spray with corn oil
spray (or brush with vegetable oil), and place on
grill. Cook for 5 minutes until you have nice grill
marks on one side and then turn over and cook for
another 5-8 minutes until no longer pink inside.

Put scallions, cilantro and a bit of salt into a bowl
and mix well. Place chicken in another ovenproof pan
that fits all the chicken in one layer.  Sprinkle the
chicken with at least 1/2 the scallion mixture,
leaving a bit to mix with the rice (if using). Top the
chicken with the cheese.

Bake, uncovered, for 10-15 minutes until the chicken
is fully cooked and the cheese is all bubbly.

Mix together cooked white rice with the rest of the
scallion mixture and a bit of salt and pepper.

Serve 1 chicken breast half with some of the rice and
a green vegetable (like Quick Microwave Broccoli
w/Garlic).

NOTES : Risa's notes:

* I used up what was left in a bottle of Emeril's BBQ
Sauce. Since it is quite sweet, I watered it down a
bit. Use whatever is your favorite bbq sauce (if low
carbing, use either a homemade or commercial
sugar-free bbq sauce such as Walden Farms).

** I used Cabot's Habanero Cheddar Cheese. If you
don't like hot foods, use a mild cheddar or a sharp
one or monterey jack cheese.
