[CH] Tonight's Dinner - Chile Scallion Egg Casserole

This was tonight's dinner and we both loved it. Trev
had Bagel Bites as he doesn't like eggs at all (I have
to sneak them into things for him to get any in his
diet at all).

I adapted it from 500 Low Carb Recipes by Dana
Carpender. Great recipe. Really easy to make and
perfect for a night after Trev's karate class.

YUMMY - I'm having the leftovers for breakfast

                       Chili Scallion Egg Casserole

   5                    eggs -- lightly beaten
   3      tbsp          soy powder
     1/2  tsp           salt
     1/2  tsp           baking powder
   1      cup           cottage cheese
   8      oz            cheddar cheese -- shredded
   3      tbsp          unsalted butter -- melted
   2                    scallions (green & white
parts) -- chopped
     1/4  cup           cilantro -- chopped
   2      tbsp          dried green chile -- soaked in
   2      tbsp          warm water

Put dried chile in a small bowl and cover with warm
(or hot) water. Let sit, covered, for 10 minutes.

Meanwhile, preheat oven to 350 degrees F. Spray a 6
cup casserole dish with nonstick cooking spray (butter
flavored), or butter it generously.

Break the eggs into a medium bowl and beat them well.
Whsk in the soy powder, salt and baking powder. Mix
well, working some of the lumps out.

Beat in the cottage cheese, cheddar, melted butter,
scallions, cilantro and green chile. Pour the egg
mixture into prepared casserole, put in oven and bake
for 35 minutes (if a little less, don't worry. If it
is a bit runny, this is ok as it can act as the
sauce).

Yield: 4 servings

Without scallions and cilantro (my additions): 7g
carb, 1g fiber, useable carb 6g, 30g protein per
serving.

NOTES : A note from Dana:

Don't know how big your casserole is? Fill it with
water using a measuring cup. You want one that holds 6
cups of water, although a tad less or more won't
matter.

Risa's notes:

* You can find soy powder at the health food store or
a well-stocked supermarket. Do not confuse it with soy
flour or the soy drink mixes. It is just plain soy
beans that have been dried and ground up.
** If you cannot find green chile that has been dried,
then use a 4 oz can of chopped green chiles, drain
them well and use that instead. Or use any kind of
chile you wish, chopped.
