A vodka marinara sauce is largely exactly what it sounds like -- use your regular tomato sauce recipe, but after sauteeing your onions, garlic, crushed chile, and dried herbs, deglaze with vodka rather than wine. All of the nice alcohol-soluable flavors will bloom in the vodka, but the sauce will not be otherwise altered (as it is when you deglaze with, say, red wine). I was at a wedding on City Island in the Bronx last summer and I think we had "penne vodka" as a first course for every single meal -- and they were all fantastic.
