Here are the one's I make.
 For a real treat dice 3 or 4 habs and mix in with the Japalenos

      Title: Hushpuppies - Big Jim's
 Categories: bbq list, hushpuppies
      Yield: 1 serving

    1/2 c  Self rising flour
      1 tb sugar
      2 c  self rising corn meal
      1 sm onion; finely chopped
      1    beaten egg
    3/4 c  milk

Sift together dry ingredients. Add onion.. Add beaten egg and milk to dry
ingredients, stirring lightly. Drop a tablespoon of batter into hot deep
fat, frying only a few at a time until golden brown. Drain on paper towels.

      Title: Jalapeno-Cheddar-Orange-Juice Hushpuppies
 Categories: bbq list, hushpuppies
      Yield: 1 serving

      2 c  white self-rising cornmeal
      1    egg
    1/4 c  fine chopped onions
    1/4 c  shredded cheddar cheese
    1/4 c  fine chopped jalapeno
           -peppers
      1 c  orange juice more if needed
    1/4 ts salt
      1    table sugar

Mix all in bowl until smooth, moist, stiff batter is formed. Cook and serve
as above.

      Title: Tuna And Tomato Hushpuppies
 Categories: bbq list, hushpuppies
      Yield: 1 serving

      3 c  to 4 c white self-rising
           -cornmeal mix
      2    eggs
      1    # 303 can stewed tomatoes
           -mashed with juice
      2 sm cans white tuna in water (don't
           -drain)
    1/2 c  finely chopped onions
    1/2 ts salt

Mix all the ingredients (except cornmeal) until well blended. Slowly mix in
the cornmeal until it makes a stiff moist batter. Drop by
teaspoon (like you stir tea with) into 350F oil and fry until golden
brown. drain on paper towels and eat.
