Hi pods,
Something hot we had for breakfast the other day. Not sure what to call it--not really an omelet is it? Not the right ingredients for a crepe. Don't really like 'egg wrap'. Any suggestions?

Mango Avocado Egg Wrap

Amount Measure Ingredient -- Preparation Method

Egg mix
1 each egg
3/4 cup egg substitute, liquid -- Any combination of egg and substitute to make about 1 cup
1/4 teaspoon cumin
1/4 teaspoon chile powder -- to taste--habanero powder, cayenne, Thai--"chile", not "chili" powder.
Mango Salsa -- reserve about 2 tsp for
garnish
1/2 medium avocado -- chopped
1 teaspoon lemon juice
1/3 cup mango -- chopped about 1/2"
1 teaspoon hot sauce -- Kiss of Fire or similar habanero (c. chinense) paste type sauce--light vinegar
salt and black pepper -- to taste
spray oil -- Can't Believe It's Not Butter spray
Garnish
1 ounce feta cheese -- crumbled
2 tablespoons salsa -- Mexican style
Combine egg and egg substitute to make 1 cup. Beat in chile powder, cumin and a little fresh ground pepper. Set aside.
Mix the avocado and lemon juice with a fork. Add the mango. If using Kiss of Fire or similar habanero sauce add a little bit at a time (unless you're a ChileHead). It should taste hot, but not overpowering. Salt and pepper to taste.
Over medium heat spray a 12" non-stick skillet/omelet pan with spray butter/oil. Pour half the egg mix in so it forms a thin, even layer. Salt lightly. Cover and turn heat to medium low. When top is firm spread half the salsa mix on one side. With a spatula start to roll the egg over the salsa. Tip the pan and let gravity help finish it. Roll it onto a plate and garnish with a teaspoon of Mango salsa, a tablespoon or so of Mexican style salsa, and a sprinkle of feta cheese. Repeat with remaining egg and salsa. Serve with toast.
