I bought some tomatillos at the Dover Street Fair last
weekend and thought I would make some salsa with them.
I took a recipe from the Great Salsas book by Mark
Miller and it really came out great.

I blackened the tomatillos on the cast iron grill and
then put them in the blender with the rest of the
ingredients. Boy did this come out hot and wonderful.
Thought I would pass it on ...

Chipotle Tomatillo Salsa
Mark Miller

1 lb tomatillos (15), blackened and rough chop
1 lg clove roasted garlic*
1/2 tsp sugar**
1/2 tsp salt
4 chipotle en adobo
2 tbsp adobo sauce
1/3 cup cilantro

Place tomatillos, garlic, sugar, and salt in a food
processor or blender. Blend until most pureed. Add the
chipotles, adobo sauce and cilantro and blend briefly,
leaving the salsa just a little textured.

Yield: 2 cups

* I used a clove of garlic that I blackened on the
grill
** I used Splenda
