This was tonight's dinner. It could've been much hotter but I wanted to follow the recipe and I didn't want the chiles to overpower the parsley flavor. That was important. It was incredibly delicious. Of course, if you wish, you can up the amount of chile, which is almost nothing. I got this from Everyday Food Magazine, June 04, and they aren't a chile publication so up the amount all you want. The paste is similar to a Chimichurri sauce and it is just incredible with the steak flavors. Yummy. * Exported from MasterCook * London Broil w/Parsley-Garlic Paste Recipe By : adapted by RisaG from Everyday Food, June 04 Serving Size : 4 Preparation Time :0:00 Categories : Main Dish Meat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 london broil steak rub Paste: 1/2 bunch flat-leaf parsley 3 cloves garlic 1 1/2 tb fresh oregano 1 1/2 tb red wine vinegar 1/8 tsp red pepper flakes 3 tb extra-virgin olive oil For paste: In food processor, grind up the garlic with the parsley. Add the oregano, vinegar and red pepper flakes. Puree. Then, with machine on, drizzle in the olive oil until a paste forms. Stop machine. Set aside. For steak: In a casserole dish or something large enough to hold the steak, rub the steak rub into the meat. Let it sit for several hours, or overnight. When ready to cook, preheat broiler (or set up grill). When hot, spray grill rack (off the fire of course) or the broiler pan with cooking spray. Put steak on pan and put under the broiler for 6 minutes on one side, then turn over and cook for another 2-3 minutes, for rare (140 degrees F) or medium rare (145).* Any more and it will be impossible to chew. Remove from broiler pan and let rest, on a platter, for 5 minutes. Do not touch it. Carve steak. Serve drizzled with parsley paste. - - - - - - - - - - - - - - - - - - NOTES : Risa's note: * If using grill, grill on one side for 6 minutes and then turn over and cook for another couple of minutes. Remove to platter and let it sit for a few minutes. Do not cut into it. The juices will run all over the place and will make the steak even harder to chew.
