Greetings. There is an excellent cheese from the Cabot Cheese
Company in Vermont -- Chipotle Cheddar Cheese. Like most cheeses, it
is best when left to "ripen" at room temperature for a couple of
hours in advance. The chipotle flavor is subdued, which I prefer.
Try it! Available at Wal-Mart. R.
