The Dallas News is having a contest for people to "invent" a new mixed drink which can become a "signature drink" for Texas, to sell to all the tourists who come here. I have decided to enter this contest, and I invented a new mixed drink. TEXTINI I have to send a lot of info to the Dallas News about this. There is no "prize". I am doing it purely for the fun of it. So here is what I have concocted. If you can duplicate it at home and try it, let me know what you think in the next few days. The deadline is next week. I tried one of these this evening, and I think that it is delicious. It is "very Texas" in concept. I am writing this recipe here for the first time. INGREDIENTS 4 Parts Tequila 1 Part Extra-Dry Vermouth Key Lime Juice (see note) Cumin Tabasco Sauce (McIlhenney's brand, see note) Pickled Tabasco Peppers (such as Trappey's brand) Jalapeņo-Stuffed Queen Olives (such as Mezzetta brand) Hot Pickled Okra (such as Talk O' Texas brand) PROCEDURE Mix together 4 parts tequila and 1 part extra-dry vermouth in whatever amount that you need, from jiggers to cups. Using jiggers, you'll have a little more than will fit into an ordinary martini glass. Chill this mixture and several martini glasses in the refrigerator. Also, it is recommended to pre-chill the pickled tabasco peppers, queen olives and pickled okra. Squeeze and strain some key lime juice onto a flat plate. On another flat plate, shake out some cumin. When you are ready to prepare the drink, hold a chilled martini glass upside-down and thoroughly coat the rim with key lime juice. Then immediately dredge the rim in the cumin. This is much like salting the rim of a Margarita glass. Next, shake 2-3 drops of Tabasco Sauce into the bottom of the martini glass. Then using a plastic martini toothpick-like olive spear, spear one of the pickled Tabasco peppers. Then also spear one of the jalapeņo-stuffed queen olives. Place this spear into the martini glass. Then place a piece of hot pickled okra into the glass, at an angle to the other spear. Carefully pour (no drips, no spills) the chilled tequila-vermouth mixture into the glass up to about 1/4th inch from the cumin-coated rim. NOTE If I can find Key Limes, I'll always buy them instead of regular limes. Their flavor is more pungent. However, if Key Limes are not available, regular lime juice could be used. Lime juice is also used to coat the rims of Margarita glasses before they are salted. McIlhenney's in Louisiana now has several varieties of its "original" Tabasco Sauce. There are garlic, habanero and chipotle varieties. I prefer the Garlic Tabasco. Each host or bartender who prepares a Textini can use whatever variety of Tabasco Sauce that is preferred. This would give some variation to the drink from club to club. Enjoy! It's good! I hope it wins first place and becomes a legend! HA.
