I've made these -- it takes a big crock pot --there will be about 3 quarts of beans and rice Red Beans and Rice 1 ham bone, cracked 1 pound small dried red beans, soaked overnight and drained 1 onion, chopped 3 cloves garlic, minced Hot peppers to taste -- or hot sauce salt and pepper, to taste 2 cups raw rice 1 cup chopped green onions 2 15 oz cans tomato sauce Place beans in bottom of Crock Pot and add remaining ingredients, add rice and green onions, with 1 1/2 quarts water. Cover and cook on high 1 hours. Turn heat to low and cook, covered, 10 to 12 hours. Remove ham bone and remove meat from bone and return meat to pot. Season with salt and pepper and serve, topped with chopped green onions
