Just for the heck of it, here's what I had for supper. It's easy and good. Hot Smoky Tuna-'Tater Salad ~~~~~~~~~~~~~~~~~~~~~ About 2 c. cooked, drained, diced potatoes, warm or room temp. -OR- 1 can white potatoes, drained, rinsed and diced 1/2 a medium yellow onion, diced 1 can water-pack tuna about 3 Tbsp. mayonnaise (real only!) 2 Tbsp. Kraft hickory-smoke-flavor barbecue sauce (don't substitute chipotle sauce) 1 Tbsp. cider vinegar 2 tsp. good soy sauce Lots of seeded, minced red chiles Black pepper to taste Big homegrown or local beefsteak tomatoes, one per person (use tangy types, not low-acid ones) Mix well and allow to sit for a few minutes while flavors get to know each other. Quarter a big tomato from top almost but not quite to bottom, so it can be opened out but holds together. Spoon a generous amount of the salad into the middle and serve.
