Works for me, Erich! Pineapple added to the growing list of must-trys (with kielbasa or hot sausage slices perhaps? or chunky ham?) ;-)) A couple weeks ago, I got the "bright" idea of adding a can of unsweetened pineapple chunks (with juice) to a zucchini-squash-tomato-onion-jalapeno soup concoction I was throwing together. Love soups/stews and it's hard to completely ruin them. The end result in this case was ...ehh ...okay. The pineapple neither added nor detracted. Overall taste and textures too milque-toasty bland. Not enough contrast or distinct taste or something. Maybe had I added more chile ....? Naahh, chile rescues many a dish around here, but it can't save everything. (That dirty little confession may come as a shock to some CHs, but I have to admit it, I do. Which doesn't mean I won't keep trying to use chile as a superpower in the kitchen.) I do like to experiment with ingredients. "Throwing things together" is more my style of cooking, which has uneven results. Altho it usually produces an edible dish, it may not always be an especially palatable one. LOL. Which is why it reeaaally annoys me when I take the time and care to actually follow a recipe like that Caribbean Citrus Pork, and still get ... ehh! What's with that?!!!
