Re: Most are marketing and distribution companies Yup- for good or ill, I'll not argue a position here, there is a tremendous amount of consolidation in the food biz like everything else. The reasons are mostly economic- consumers reward the big guys who can manufacture at lower prices and can deliver at least a marginal quality for less than the next guy. Simple human nature, for the most part, to seek to save a nickel or two. The big guys are also increasingly the only ones who can deal with all of the ever changing governmental regulations and associated crap. The net result is what I call the 'Sysco-izing' of the industry. Variation is squeezed out as it becomes impossible to compete (price-wise) with those become 'assimilated' ;-) The number of folks who are willing to pay a much larger price for something that is unique, is 'niche' defined!
