You are correct that they do not bottle Tabasco in New Mexico. Cervantes Enterprises does, however, make the cayenne mash and age it before they ship it to McIlheney. That is their biggest customer. However, as alot of business' in America, they also make mash and age it for many other hot sauce companies. 20 years ago I was doing legal work for some corporations and discovered that "detergent" (amine oxides) was made primarily by only one company in America-DuPont (and, yes, currently, there are companies in Germany, and now China and India that make amine oxides) Originally the amine oxides were used as a reagent in the refining and mining of different potassium and other salts. The lab technicians learned to use a small amount of detergent to clean their glass ware. Eventually, it became a substitute for soap after WWII. So Tide, All, Gain (Proctor & Gamble) etc use the same chemical compound-its just the product additives that are different. Same is true of glass. Most are marketing and distribution companies and their actual supplier is one company that makes the product according to their formula
