Anyways, I wanted to just mail and beseech you all for your favourite fruit
based hot sauce recipes eg mango, papaya etc

I like to have 2 types of hot sauce -
[sour salty HOT], and
[sweet fruity WICKED]

And I end making most of my own, so I would really appreciate a few fav
recipes.

              Well I have one, but as usual for me, not really a recipe. It
is a great sauce though!

It uses green dates, fresh mango, fresh figs, lime juice, sea salt and
habanero chiles.

Now, IIRC, there was 2 x the weight of fresh chopped mango, than green
seeded green dates or fresh figs (so half mango, 1/4 fig, 1/4 dates for the
fruit), along with (shit-loads!) of chiles - to taste? heheheh... - the
whole lot was blended together in the machine wot does such with enough lime
to get the acidity up where it should be and enough salt to help preserve
it. Now initially this was a short life 'raw' sauce, so it was made,
bottled, and used quickly as it was without any heat treatment. However, it
can be pasteurised without *too much* loss of flavour before
bottling/canning, but it will take some of the fresh edge off and heat out
of it.

I've given heaps of this away in the past and it's yet another one that folk
have really enjoyed a lot. Simple too really, apart maybe for finding green
dates - that could be a bitch unless there's the right kinds of
Asian/similar fresh fruit grocers in the area.
