A recipe for hot pepper jelly -- We have used straight habs -- makes a nice
clear orange Jelly. My sons used then in 4 oz jars for 4-H project --
warned the jduges it was hot :-) One year made layered jelly, ripe
jalapenos, green jalapenos and ripe habanero peppers.

HOT PEPPER JELLY

1/4 c. hot red peppers, chopped fine ( I use all hot peppers)
3/4 c. bell peppers, chopped fine
6 1/2 c. sugar
1 1/2 c. apple cider vinegar
6 oz. Certo

Mix peppers and vinegar in pan -- bring to boil and boil for 5 minutes.
Strain. Mix juice and sugar. Put on burner and let come to a rolling boil.
Add certo and bring back to a rolluing boil for 1 minutes. Pour into
sterilized jelly jars and process in hot water bath for 5 minutes.

Happy eating!
