I have to second Matt's comments about John T.'s powders...the best homegrown and processed powders I've used since Calvin's. John was kind enough to send me little bottles of about nine different kinds and I'm enjoying every grain! Most of them are just fine for my moderate tongue too ;^) On the commercial level, we have both Jim C. and Dan T. who do a smashing job of producing chile powders and blends. But, I envision them or their employees using huge, stainless steel blenders and dryers and grinders to produce their wares. It's the home cook with the spice grinder and paper mask to keep from chocking that amazes me with their dedication and skill.
