Hi Mike...Interesting observations on your part. In response to your questions re: acidic flavors and love of chiles, I'm a moderate CHer...I don't like things that are so hot they drop you to your knees. And...I don't like overly sour/acidic things either. Even most vinegar and oil salad dressings or Italian vinegar based salad dressings are too puckery for me. Just a little food for thought! SandyO
