Make sure anyone you buy from is known to be reputable. Hmmm, as long as I'm here, went to the Oxnard, CA Salsa Festival a month or so ago. Had some good stuff in the tasting tent. One habanero sauce was hot, really hot, hotter that the Red Savina sauce at another booth! Forget the guy's name at the Savina booth, Buck maybe?, but he knows Jim C--said he was supplying some mash for him. Good stuff there, too. The hab sauce was a local restaurant's, not available elsewhere, or I'd try to dig up a reference. Hot regards, Riley
