Who cares about the viability of the seeds in the dehydrator? Pick the 
best two or three jalapenos from the bunch you have and set them aside 
for air drying. Keep these for your seed. Bake the rest!

New lesson in the SOHK, it shall be remembered.. 

One year I left some ROF chiles in a strawberry basket,  probably 
sometime in Sept.  I found them as I was cleaning up my seed starting 
shelves, probably around the first of Mar.  The pods  snapped apart and  
I just poured the seeds out.  The viability was excellent.
