Chimayo

The first chile strains grown by the colonial  Spanish in  New Mexico 
were in Velarde and Chimayo in 1598. The chile here earlier and grown by 
the pueblo indians along the Rio Grande along with corn, squash and

Thanks for the info, I prefer heirlooms,  these appear to be older than Doug or Dr Male and they are good in everything I have tried so far  


JC  got some Chimayo powder  ?


For east coasters   

Shrimp dipping sauce 


2 cups of ketchup
1 tbsp Chimayo ( or your fave chile)
1 tsp brown sugar 
1/2 tsp horseradish  (if you got it from a cheese head  use 1/4 tsp)

Just mix..
