Greetings everyone - delurking just long enough to post this. I found this as part of an obscure dumpling recipe involving frogs legs... strange, but true! I might roll them in granulated sugar at the end, similar to candied orange peel... Also, would be an interesting addition to any fruit cake recipe, that is, if anyone makes them anymore. Enjoy - Helen Candied Chilies: 1 cup granulated sugar 1 cup water 20 dried small red-hot chilies For the candied chilies: In a saucepan, bring the sugar and water to a boil. Reduce the heat and add the chilies. Simmer until they appear translucent, about 20 minutes. Remove from the heat and allow to cool in the syrup. Strain the chilies, discarding the syrup, and dry on a cooling rack for about three hours.
