My favorite cheese is from Headville, VT

They were making cheese in 1824  almost 100 years longer than Cabot,  
and they still do it the same old way.

Just like aging a home brew,  Cool place out of the sun, temps above 40 below 50,  The wax wrap prevents molding :-)
